Zakopane

 

Zakopane is a town in southern Poland with some 28,000 inhabitants (2004), situated in Lesser Poland Province since 1999 (in 1975-98, it was part of Nowy Sącz Province). The town, a place of Góral culture and informally known as "the winter capital of Poland," lies in the southern part of the Podhale region at the foot of the Tatra Mountains, the only alpine mountain range in the Carpathian Mountains.

 

History of Zakopane

 

Originally, Zakopane Valley was overgrown with woods. A name of the city is probably a consequence of the fact that - it derives from the term „zakopane", which in Polish means a terrain grubbed for a clearing.

At first, seasonal shepherd's settlements appeared here, which transformed into a village in the second half of the 14th century. Primarily, it was a property of the king, and in 1772 it was captured by the imperial-royal Austrian treasury, which, subsequently, sold it together with a part of the Tatra Mountains to the Homolacs family in 1824.. Oscypek

 

Oscypek  is a smoked cheese made of salted sheep milk exclusively in the Tatra Mountains Oscypek is a protected trade name under the EU's Protected Designation of Origin geographical indication. Oscypek is made using exclusively salted sheep's milk. Addition of cow's milk is strictly regulated by protected trade name recipe. Unpasteurized salted sheep's milk is first turned into cottage cheese. This is then repeatedly rinsed with boiling water and squeezed. After this, the mass is pressed into wooden, spindle-shaped forms in decorative shapes. The forms are then placed in a brine-filled barrel for a night or two, after which they are placed close to the roof in a special wooden hut and cured in hot smoke for up to 14 days. The first mention of cheese production in the Tatra Mountains dates back to the 15th century, in a document from the village of Ochotnica in 1416. The first recorded recipe for oscypek was issued in 1748 in the Żywiec area

Tatra Mountains

 

By far the greatest treasure of our country, to which tourists arrive each year from various parts of World. The Tatras are the highest mountain lot within the Western Carpathians. Length measured from the Tatra Mountains  Huciańska Pass - 900 meters above sea level to Kobyli Hill, more precisely to  Zdziarski,Pass - 1075 meters above see level is in a straight line 53 km, and along the ridge 80 km. The whole Tatra area is protected and is covered by Tatra National Park.
